Maple Dijon Brussels Sprouts

1 bag shaved brussels*

2 tbs coconut oil (or other roasting oil)

1 tsp sea salt

1/2 tsp pepper

2 tbs maple syrup

1 tbs dijon mustard

1/3 c craisins

1/3 c toasted pecans (or other nut of choice) *it’s also 100% ok if they aren’t toasted. frankly, the oven toasts them a bit for you anyways


1. preheat oven to 400

2. toss the chopped brussels in the coconut oil and sprinkle with sea salt and pepper

3. roast for 15 minutes, tossing halfway through

4. meanwhile, mix the the maple syrup and dijon in a small bowl

5. once brussels come out, toss them in the maple-dijon mixture, pecans, and craisins

6. roast for an additional 5-10 minutes (depending how done you like them!)

7. serve warm or at room temperature
