Easy Oven Roasted Potatoes

2 large potatoes, scrubbed

3 Tbsp olive oil

1 Tbsp Italian Seasoning

1 tsp salt

4 Tbsp Parmesan cheese


Preheat oven to 450ºF. Line a rimmed baking sheet with foil.

Slice potatoes into very thin slices (1/4 inch). Put potato slices in a gallon ziplock bag.

Pour olive oil, Italian seasoning and salt in ziplock bag and toss to coat potatoes.

Place potatoes in a single layer on prepared baking sheet.

Bake for 15 -20 minutes, until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.


These work better if they’re a little thicker than a mandoline slice
